Protein Pancake Variations

As I mentioned previously, I’ve been working on a healthy mind and body this summer. As part of this, I joined the Tone it Up Community and have been loving all the added support.

On top of encouraging members and awesome workouts, Tone it Up has the absolute best healthy pancake recipe. I have made a zillion combinations and variations of these pancakes. They aren’t even sinful! I thought I would share my two favorite variations today.

Last night, Spence and I wanted some fresh seafood. I had seen a place called Zimm’s Little Deck earlier last week and really wanted to try it (well it is also classified as a wine bar, so you decide why I truly wanted to go after a very long Tuesday).

Grass-Fed Buffalo Tacos + Flourless Zucchini Brownies

I know I am supposed to be a Vegan, but I really cannot pass up grass-fed buffalo off of the Rogers’ ranch in Colorado. In fact this meat is SO good for you, I wouldn’t consider it meat at all (perhaps I’m just trying to make myself feel better). Also, we just ordered $200 dollars worth and it is packed into our freezer. So you can judge all you want, I’m going to continue eating my “non-meat” meat. Continue reading →
